Researchers from the recent study of the School of Public Health of the University of Loma Linda address the question of how to demonstrate the benefits of a diet based on plants in blood, urine and tissues. The results were published in February of this year in The Journal of Nutrition.
The number of participants in the study was 840 subjects, divided into different diets:
- vegans,
- Egg-lacto-vegetarians,

Blood, urine, and fatty tissue samples were regularly taken to all participants. The samples were analyzed by different markers, including isoflavones, carotenoids, unsaturated fatty acids and saturated fats and vitamins.
Results of the study: vegans have the best levels of blood
The research team came to the conclusion that vegans among the participants had the highest scores of these markers that are considered effective preventively, thus avoiding the disease. In addition, vegans also had the highest levels of omega-6 and omega-3, but the lowest level of saturated fats.
